Ingredients
  

  • 1 cup fresh pomegranate juice store-bought or from about 2 large pomegranates
  • 1/2 cup freshly squeezed orange juice about 2 medium oranges
  • 1/4 cup freshly squeezed lime juice about 2-3 limes
  • 2 tablespoons honey or agave syrup adjust to taste
  • 1/4 teaspoon vanilla extract
  • 2 cups sparkling water or club soda chilled
  • 1/4 teaspoon orange blossom water optional but adds wonderful aroma
  • Fresh rosemary sprigs for garnish
  • Fresh pomegranate arils seeds, for garnish
  • Orange slices for garnish
  • Ice cubes

Instructions
 

  • Prepare your juices by extracting fresh pomegranate juice if not using store-bought. If juicing yourself, cut pomegranates in half and use a citrus juicer or press firmly with a spoon over a bowl, then strain out solids.
  • Combine the liquid base by mixing pomegranate juice, freshly squeezed orange juice, and lime juice in a cocktail shaker or large mason jar. Stir well to integrate all flavors.
  • Add sweetener and aromatics by stirring in honey or agave syrup until completely dissolved. Add vanilla extract and orange blossom water if using. The warmth of your mixture will help incorporate honey more easily.
  • Chill the mixture by placing it in the refrigerator for at least 30 minutes if time allows. This step isn’t mandatory but helps develop the flavors.
  • Prepare serving glasses by filling them halfway with ice cubes. If desired, rub the rim with an orange slice and dip in a mixture of fine sugar and lime zest for an elegant presentation.
  • Assemble the mocktails by pouring the juice mixture into each glass, filling about 2/3 full, then topping with chilled sparkling water. Stir gently once to combine without losing carbonation.
  • Garnish beautifully with a sprig of fresh rosemary, a sprinkle of pomegranate arils, and an orange slice on the rim. The rosemary adds an aromatic element when you bring the glass to your lips.

Notes

  • For the best flavor, use freshly squeezed juices rather than bottled versions.
  • Make the base mixture (everything except sparkling water) up to 2 days ahead and store refrigerated.
  • For a party, prepare a large batch of the base mixture and let guests add their own sparkling water and garnishes.
  • The orange blossom water is subtle but transforms the drink with floral notes—find it in Middle Eastern markets or specialty food stores.
