Ingredients
  

  • 4 green tea bags or 2 tablespoons loose leaf green tea
  • 2 ripe peaches sliced (plus extra for garnish)
  • 2- inch piece fresh ginger thinly sliced
  • 1/4 cup honey adjust to taste
  • 6 cups water divided
  • Ice cubes
  • Fresh mint leaves for garnish optional
  • Lemon slices for garnish optional

Instructions
 

  • Prepare the peach-ginger infusion: In a medium saucepan, combine 2 cups of water with sliced peaches and ginger. Bring to a simmer over medium heat, then reduce to low and let it gently bubble for about 10 minutes until the water is infused with flavor and slightly colored.
  • Remove from heat and add the green tea bags. Allow the tea to steep for 3-5 minutes—no longer or it may become bitter.Remove the tea bags, squeezing gently against the side of the pan.
  • Stir in the honey while the mixture is still warm, ensuring it dissolves completely. Adjust sweetness according to your preference and the natural sweetness of your peaches.
  • Strain the mixture through a fine-mesh sieve into a heat-resistant pitcher, pressing gently on the solids to extract maximum flavor. Discard the solids.
  • Add the remaining 4 cups of cold water to the pitcher and stir well to combine. This dilutes the concentrated tea mixture to the perfect strength.
  • Refrigerate for at least 2 hours until thoroughly chilled. The flavors will continue to develop and meld during this time.
  • Serve over ice in tall glasses, garnished with fresh peach slices, mint leaves, or lemon wedges if desired.

Notes

  • For a stronger ginger flavor, grate half of the ginger instead of slicing it all.
  • This tea keeps well refrigerated for up to 3 days, though the fresh flavor is best within the first 24 hours.
  • For a special occasion version, add a splash of peach schnapps or white rum to each adult serving.
  • Make a concentrate by skipping the addition of cold water, then mix with sparkling water for a bubbly version.
  • Freeze some of the tea in ice cube trays to prevent dilution when serving.
