Ingredients
  

  • 2 ripe peaches pitted and chopped (or 1 cup frozen peaches, thawed)
  • 1 tablespoon fresh ginger peeled and finely grated
  • 1 tablespoon honey or maple syrup adjust to taste
  • 2 tablespoons fresh lemon juice
  • 16 oz ginger-flavored kombucha unflavored works too
  • Ice cubes
  • Fresh mint leaves for garnish
  • Peach slices for garnish

Instructions
 

  • Prepare the peach puree: Add chopped peaches to a blender and blend until smooth. If using frozen peaches, ensure they’re completely thawed to achieve the right consistency.
  • Strain the puree: Pour the peach puree through a fine-mesh strainer into a bowl, pressing with a spoon to extract all the juice while leaving solids behind. This ensures a smooth mocktail without pulp.
  • Create the base mixture: In a cocktail shaker or mixing bowl, combine 4 tablespoons of strained peach puree, grated ginger, honey, and lemon juice. Stir vigorously until the honey is completely dissolved.
  • Add the kombucha: Slowly pour the kombucha into the mixture—be gentle to preserve the carbonation. Stir very lightly just to combine.
  • Prepare the glasses: Fill two tall glasses with ice cubes, leaving about an inch of space at the top.
  • Pour and garnish: Divide the mocktail mixture between the glasses, garnish with fresh mint leaves and peach slices, and serve immediately while the kombucha is still bubbly.

Notes

  • For the most flavor, choose peaches that yield slightly to gentle pressure and smell fragrant at the stem end.
  • The peach puree can be made ahead and refrigerated for up to 2 days.
  • If you prefer a stronger ginger kick, let the grated ginger steep in the peach mixture for 10 minutes before straining it out.
  • For a more sophisticated presentation, freeze peach slices to use as both garnish and natural ice cubes.
  • Always add kombucha as the final ingredient to maintain maximum fizz in your mocktail.
