  • 4 tablespoons all-purpose flour
  • 2 tablespoons granulated sugar
  • ¼ teaspoon baking powder
  • ¼ teaspoon cream of tartar crucial for authentic snickerdoodle flavor

  • 3 tablespoons milk any kind works
  • 1 tablespoon vegetable oil or melted butter
  • ¼ teaspoon vanilla extract

Instructions
 

  • Prepare your mug by lightly greasing the inside with butter or cooking spray to prevent sticking.
  • Mix the dry ingredients directly in your mug – add flour, sugar, baking powder, cream of tartar, and salt. Stir with a fork until well combined and lump-free.
  • Add the wet ingredients – pour in milk, oil or melted butter, and vanilla extract. Stir until you have a smooth batter, making sure to scrape the bottom and sides of the mug to incorporate all the dry ingredients.
  • Prepare the topping by mixing the cinnamon and sugar in a small bowl, then sprinkle evenly over the batter. Use your fork to gently swirl it just slightly into the top layer.
  • Microwave on high for 60-90 seconds until the cake rises and the center is just set. Start checking at 60 seconds as microwave powers vary – the cake should look slightly moist in the center but not wet or runny.
  • Let the cake rest for one minute before enjoying – this allows the cake to finish cooking and set up properly.

Notes

  • For an extra-authentic snickerdoodle experience, don’t skip the cream of tartar – it provides that signature tangy flavor that distinguishes true snickerdoodles.
  • This cake continues cooking slightly after coming out of the microwave, so it’s better to slightly undercook than overcook.
