Sparkling Cherry Lime Mocktail

A vibrant ruby-red mocktail combining fresh cherries and zesty lime with bubbly soda water for a refreshing, sophisticated non-alcoholic beverage that’s perfect for summer gatherings or anytime refreshment.

Ingredients
  

  • 2 cups fresh cherries pitted (or frozen, thawed)
  • 1/4 cup fresh lime juice about 2-3 limes
  • 3 tablespoons honey or maple syrup adjust to taste
  • 1 tablespoon lime zest
  • 4 cups sparkling water or club soda
  • Ice cubes
  • Fresh cherries and lime wheels for garnish
  • Optional: Fresh mint leaves for added freshness

Instructions
 

  • Prepare the cherry base by placing pitted cherries in a blender or food processor. Pulse until completely pureed and smooth, about 30-45 seconds.
  • Strain the cherry puree through a fine-mesh strainer into a bowl, pressing with a spoon to extract as much liquid as possible. Discard the solids or save for another use.
  • Mix the flavor base by combining the strained cherry juice, fresh lime juice, honey or maple syrup, and lime zest in a pitcher. Stir until the sweetener is completely dissolved.
  • Chill the mixture in the refrigerator for at least 30 minutes to allow the flavors to meld together.
  • Assemble each mocktail by filling glasses halfway with ice, then adding about 1/4 cup of the cherry-lime mixture.
  • Top with sparkling water, pouring slowly to maintain carbonation. Aim for a ratio of 1 part cherry mixture to 2 parts sparkling water.
  • Gently stir each glass once or twice to combine the ingredients without losing too much fizz.
  • Garnish with fresh cherries and lime wheels on the rim of each glass. Add a sprig of mint if desired.

Notes

  • For a stronger cherry flavor, let the cherry-lime base sit overnight in the refrigerator.
  • Dark sweet cherries will give the most vibrant color and rich flavor, but any variety works.
  • The strained cherry pulp can be frozen in ice cube trays and added to smoothies later.
  • To make ahead, prepare the cherry-lime base up to 3 days in advance, but only add sparkling water just before serving.
  • For a slushie version, freeze the cherry-lime mixture for 2 hours until slushy, then blend with sparkling water.
